[cheesy broccoli soup]
Mmm....soup. :-)
Ingredients:
- 3 cups broccoli florets
- 3 cups cauliflower florets
- 3 celery ribs, sliced
- 1 small onion, chopped
- 2 cups water
- 3 tablespoons butter or margarine
- 3 tablespooons flour
- 2 1/3 cups milk
- 1 pound Velveeta cheese, cubed
Directions:
- In a large saucepan, combine
the first 6 ingredients. Bring to a boil. Reduce heat; cover and simmer
for 12-15 minutes or until veggies are tender.
- Meanwhile, in a separate saucepan,
melt butter; stir in flour until smooth. Gradually stir in milk. Bring to
a boil; cook and stir for 2 minutes or until thickened. Reduce heat and
add cheese.
- Cook and stir until cheese is
melted.
- Drain veggies and combine with
cheese sauce until heated through.
Note: How can you not love a soup
with Velveeta in it? :-)
