[maria's famous potato salad]

My mum's potato salad is a big request for any get together. Here, the directions from the pro herself...

Note: Mum uses no measurements, so I just eyeball/taste until it's right!



  1. Boil the potatoes until fork tender (about 20 minutes). Cool, then skin with a sharp knife and chop into bite size bits.
  2. Salt and pepper the potatoes then add mayonnaise and mix.
  3. Add the rest of the ingredients (except bacon) and a touch of sour cream to make creamy.
  4. Top with bacon when ready to serve and store overnight.

Note: I think the dill and parsley are what bring it together, but chuck in whatever herbs you like. Just make sure they are nice and fresh!
